A refreshing winter salad using tangerines...the vinaigrette can also be used as a marinade for poultry & seafood!

Ingredients:

    Salad
  • 2 avocados
  • 4 tangerines
  • 1/4 cup dried cranberries
  • 1/4 chopped nuts or seeds of your choice
  • 1 5-ounce clamshell Earthbound Farm frisée salad mix
  • 1 5-ounce clamshell Earthbound Farm power greens mix
  • Honey Citrus Vinaigrette
  • 2 T white balsamic vinegar
  • 2 juice of oranges
  • 1 juice of blood orange (simply for color……if you cannot find a blood orange, then use another regular orange)
  • 1 juice of lemon
  • 1 T honey (optional……only if you want a sweeter vinaigrette)
  • 1/4 cup extra virgin olive oil
  • kosher salt
  • freshly ground black pepper

Directions:

Slice the avocados in half, remove the pit, then lift out the fruit & dice into bite-size pieces.

Peel then remove the seeds from tangerines…slice the fruit into sections by cutting through the actual sections, which will create a prettier salad. Toss the tangerine sections with the diced avocado in a bowl……mixing the two fruits together will prevent the avocado from oxidizing & turning brown……you can refrigerate the combined avocados & tangerines a couple of hours before ready to use.

Combine the vinaigrette ingredients & refrigerate at least a couple of hours before using.

In a large bowl, add half of each clamshell of salad greens, tearing or slicing the larger leaves into smaller ones, then add the fruit……toss, add the vinaigrette, a couple tablespoons at a time, and toss well to coat the greens and fruit. Add more vinaigrette, as desired. Serve immediately!

Cooks' note:
For parties…actually anytime I am serving salad, I love prewashed organic greens, as it makes our lives so much easier!
You will have close to a cup of vinaigrette, and it should last a week or so…the vinaigrette is terrific also as marinade for poultry, fish & shrimp!
To double the salad for a larger group or dinner party, use both clamshells & double the number of avocados & tangerines…

These is nothing complex about this recipe, but the flavor is incredibly rich and creamy. Way beyond your average egg salad!
