  • 2 bags broccoli slaw
  • 1 medium jicama
  • 2 chipotle peppers
  • 1 cup fat-free sour cream or fat-free Greek yogurt
  • 1/2 lime
  • splash agave nectar
  • kosher salt
  • 1/4 bunch cilantro

Directions:

Place the broccoli slaw in a large mixing bowl.

Peel the jicama, then using a mandoline on “julienne”, create “matchsticks” & add to the broccoli slaw. Toss well to combine. This can be done a day ahead & store in the fridge until ready to serve.

In a blender or food processor, combine the chipotle peppers, sour cream/yogurt, & lime juice…add agave, a tablespoon at a time, & blend/process…continue adding agave until you have reached your desired level of sweetness…add kosher salt to taste…the dressing can be made a day ahead as well.

Finely chop the cilantro & refrigerate until ready to use.

When ready to serve, pour the dressing over over the broccoli & jicama, tossing well. Add the cilantro to the spicy southwestern jicama broccoli slaw or use as a garnish…done!

This is a recipe I adapted from a dear co-worker, Gwen Farlow...if you like a real "kick", try a little habañero pepper in the dip...if you prefer mild, then try green pepper...I serve the dip with reduced fat potato chips...celery sticks would also be very tasty!
