  • 2 2-pound blocks VELVEETA® cheese
  • 1-32 ounce can RO*TEL® diced tomatoes and green chiles
  • 1-2 bags 14.5-ounce TOSTITOS “Scoops” or your favorite tortilla chips

Directions:

In a sauté pan, brown the sausage, and break the sausage into small pieces. Once the sausage has browned and is somewhat crunchy, drain the meat and add to the slow cooker.

Add the Velveeta & the RO*TEL, place the temperature on high until the cheese is melted (about 60 minutes max), then turn the slow cooker to low heat…stir together well…you are ready to serve!

Cooks' note:
I prefer spicy or “hot” sausage, but, again, this is a personal preference…I also typically use Neese’s sausage, whose hot sausage is delicious…crumbled bacon is also really good in this dip…bacon & sausage together would be great…for additional heat, add chopped jalapeños or hot sauce…It may not be the prettiest dip, but it sure is the tastiest…while it may not be “heart-healthy”, once in a while, it really is OK to cheat…just don’t eat the entire dip by yourself!
If you are investing in a slow-cooker, I would recommend All-Clad…the nonstick insert allows you to sear or sauté your ingredients, which avoids having to use additional pots/pans during cooking…it makes preparation easier & also reduces clean-up, not to mention you retain all those great flavors in one pot, which only makes your dish better!

It's a really warm and filling dish that you won't be able to get enough of! You can add tomatoes to it if you wish and adjust the garlic, hotness and oil to your liking. Enjoy! I serve this with Romano cheese and crushed red pepper.
