Directions:

Preheat your grill to high heat.

Rinse off the oysters to remove any excess sand or seaweed…make sure all the oysters are tightly closed…discard any open oysters.

Place the oysters either directly on the grill, curved side down (flat side up)…I prefer to place the oysters on a perforated tray…place the water-soaked towel over the oysters, which will prevent the oysters from drying out as they steam.

Grill the oysters 2-4 minutes, or until the shells have “popped” open…remove immediately & serve…have everyone open their own oysters with a fork & serve with your favorite condiment or sauce.

Cooks' note:
This is Rose Marie’s family’s method of grilling oysters…she is originally from Maryland, & boy, do “Marylanders” know their seafood & how to cook it…this recipe is fool-proof!
My local “go-to” place for seafood is The Shrimp Connection…Landon has a great selection of fish & seafood…if you live nearby, simply go online and order before Thursday…you can then pick up on Friday or Saturday…it doesn’t get any better than that! These oysters came from Edgartown, MA, our favorite place & a true treat!
Bert made this perforated tray using an old cookie sheet & a drill press…the original idea came from one of the best cooks I know, Joe Nehmen…
Oysters are great alone, with a lemon squeeze, or with your favorite cocktail sauce…I mixed a little fat-free Greek yogurt into cocktail sauce & added a smidge more horseradish…yummy!
