  • 2 tablespoons fresh lemon juice
  • 1 tablespoon parsley, chopped
  • 1 teaspoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup Quinoa, cooked
  • 3/4 cup canned Chickpeas, rinsed and drained
  • 1 medium tomato, seeded and chopped
  • 1 cup fresh broccoli, cut into pieces

Directions:

In a medium saucepan, cook Quinoa according to package directions.

In a medium bowl, whisk together lemon juice, parsley, olive oil, salt and pepper.

Add Quinoa, chickpeas, tomato, and broccoli.

Toss to combine.

Cooks' note:
Quinoa is not a grain but the seed of a leafy plant related to spinach. Quinoa is an excellent source of protein - 12% to 18%.
You can make this salad your own by adding the ingredients you like, such as chopped hard-boiled egg, chopped olives, etc.
