This is decadence in a bowl...& it is incredibly easy & quick to make! Make sure you have your ingredients prepped & chopped so that the dish can be made in 15-20 minutes. Cipriani pasta is wonderful in this dish! You will make it for years to come...especially on Valentine's .. more >

Original Recipe Yield: 6 servings


  • 2 large shallots
  • 6 cloves fresh garlic
  • 2 pounds lobster meat
  • 6 ounces black truffle butter
  • 1/2 ounce black truffle
  • cup ⅓-½ heavy cream
  • truffle salt
  • * freshly ground black pepper (optional)
  • 2 boxes 250-gram (8 ounces) Cipriani tagliarelle

Chop the shallots & mince the garlic…set aside.


Chop the lobster meat into bite-size pieces if there are any larger chunks…set aside.


Shave or chop the black truffle…set aside.


Bring a large pot of salted water to a boil.


In a large (12-inch) sauté pan over medium-low heat, melt the truffle butter. Add the shallots & garlic, sautéing until softened, about 2-3 minutes.. Add the truffle, sautéing until the truffle becomes fragrant, about 2 minutes.


Add the lobster meat, sautéing until the lobster is coated with the butter. Add the heavy cream, stirring well to combine. Sprinkle with truffle salt to taste. Add just a little pepper, if desired…I do not, personally. Continue stirring until steam begins to rise from the pan. Reduce the heat to simmer & cover with a lid.


Once the heavy cream is heated through, add the pasta to the boiling water. The pasta will cook very quickly…3 minutes…you must time this…drain immediately & divide the pasta between 6 serving bowls. Immediately ladle the lobster truffle sauce over the pasta.


Serve the lobster truffle pasta with additional truffle salt, truffle & pepper, as desired. Buon appetito!

I love Aux Délices des Bois black truffle butter which is available at igourmet & The Fresh Market…
Truffle Salt is available at some local Williams-Sonoma stores, Zeto & online at Ritrovo…
Marx Foods is still my “go-to” place for fresh truffles…I like to order an ounce, then freeze the remainder in arborio rice…this may not exactly be correct, but I have been doing it for years, & it is a great way to have truffles on hand in a pinch…& the rice is perfect for a truffle risotto…Marx foods also carries truffle slicers, which I highly recommend.
For lobster meat…my favorites are Hancock’s & Dorr Lobster…you will never be disappointed!
Cipriani pasta is available online & in various grocery stores, including The Fresh Market…if you cannot find/order Cipriani, which is truly fabulous, then buy the best quality wide pasta available…
I do not add the pasta to the sauce as the pasta tends to turn to mush if overcooked…I prefer ladling the sauce over the pasta & tossing lightly to coat…I cannot stress the importance of serving this dish immediately…since you can make the dish in less than 15 minutes, I often will prep my ingredients, then make the dish last minute while everyone enjoys a glass of something & chats…It also gives a little break between courses, which is nice for a dinner party…your guests will thank you!

A quick and easy dish. Cooked chicken pieces can be added to the skillet with the pasta. Broccoli can be substituted for the spinach.
