LAST MINUTE LASAGNA

Added by: on Sep 21st, 2010
A great-tasting, easy recipe. The leftovers are good to reheat for lunch the next day, too. For those more careful eaters, use light cheese and turkey pepperoni. Unless you are a grease-fiend, the end result will taste just as good. Omit the pepperoni for a vegetarian meal.

Directions:

1

Heat oven to 350° F. Spoon 1/3 of the pasta sauce into a 9-by-13-inch baking dish. Place half of the ravioli on top of the sauce in a single layer.

2

Sprinkle with the spinach and half of the mozzarella. Layer on the remaining ravioli (you may not need all of them).

3

Top with the remaining sauce and mozzarella and the Parmesan. Cover with foil and bake for 25 minutes. Uncover and bake until bubbling, 5 to 10 minutes more.

Cooks' note:
TIP: Frozen spinach contains a lot of water, which, if not removed, can ruin a recipe. To extract the excess moisture, place the thawed block of spinach in a colander to drain, then press down on it or squeeze it with your hands.

Instant lasagne, a dry pasta product that needs only brief moistening to be ready to use, speeds up the preparation of this hearty baked entrée.
