Ingredients:

  • 400g pasta
  • 1tsp olive oil
  • 100g chestnut mushrooms
  • 200g courgette
  • 1 can (400g) artichoke hearts in water
  • 100ml soy milk
  • 1 teaspoon red chilli flakes
  • 50g pitted green olives
  • 1 tablespoon chopped chives

Directions:

Add pasta to a pan of boiling salted water. Slice the mushrooms and courgette and saute in oil over a medium heat until softened and slightly coloured.

Meanwhile, take the drained artichoke hearts and add to a food processor with a tablespoon of the milk. Blitz until smooth and creamy, adding enough extra milk to get a loose sauce like consistency. Add salt and pepper to taste and a teaspoon of red chilli flakes and pulse to combine.

Add to the pan of mushrooms and courgettes, stir together. Drain the pasta. Just before serving stir in a tablespoon of chopped fresh chives and the halved green olives before tossing with the hot pasta.
