Original Recipe Yield: 4 servings (4 chicken roll ups)
 

Ingredients:

  • 1 tbsp of extra virgin olive oil
  • 1/3 cup of chopped onion
  • 1 cup of walnuts, chopped
  • 1/2 cup of provolone cheese, imported Italian
  • 4 skinless boneless chicken breasts, thin cut
  • 1/4 tsp of black pepper
  • 1/4 tsp of salt

Directions:

Fire up the stove to 375F

In a pan place extra virgin olive oil and fry onion over medium heat until slightly browned, roughly 4 minutes.

Add the walnuts also to pan and cook for an additional 1 minute, increasing the heat slightly.

Add spinach to pan, cooking for 2 minutes or until spinach softens.

Put the contents of the pan in a glass or other suitable mixing bowl and add cheese while mixing the contents.

Use the contents of the bowl to fill chicken breasts and roll them up to contain the filling.

Roll the chicken roll ups in the remaining filling as to get some on the outside.

Bake for 35 minutes.

Cooks' note:
Using imported provolone from Italy adds an exceptional flavor to this recipe.

This is a great side dish and compliments the Crispy Apricot Pork Chops. If you cant get baby broccoli,use regular or maybe even broccolini.
