So this is one of those titular “30 Minutes Meals”, which is definitely what attracted me to this recipe. Well, that and the potatoes. I love red potatoes! The problem is that it took wayyyy longer than 30 minutes, but I fully attribute that to the fact that I’ve never made it before and that .. more >

Ingredients:

  • 1 tablespoon olive oil
  • 1 1/2 pounds Yukon gold or new potatoes, cut into 1/2-inch pieces (peel first, if desired)
  • 1 1/2 teaspoons kosher salt
  • 1-1 1/2 pounds chicken cutlets
  • 1/4 teaspoon black pepper
  • 1/4 cup dry white wine
  • 2 tablespoons unsalted butter, chilled
  • 2 tablespoons chopped fresh herbs, such as rosemary chives, parsley, or tarragon

Directions:

Heat oven to 425° F. Heat the oil in a large skillet over medium-high heat. Add the potatoes and cook, stirring occasionally, until golden, about 15 minutes.

Transfer to a baking dish and season with 1 teaspoon of the salt. Bake for 10 minutes. Meanwhile, rinse the chicken and pat it dry with paper towels.

Season on both sides with 1/4 teaspoon of the salt and 1/8 teaspoon of the pepper. Return the skillet to medium-high heat.

Add the chicken and cook until browned on each side and cooked through, 3 to 4 minutes per side. Transfer the chicken to a platter.

Add the wine to the skillet, reduce heat, and simmer for 2 minutes, constantly stirring and scraping the bottom.

Add 1 tablespoon of the butter and stir or whisk until completely combined. Repeat with the remaining butter.

Remove the skillet from heat. Add the herbs and the remaining salt and pepper and whisk to combine. Add the potatoes to the platter with the chicken and spoon the sauce over the top.
