  • 24 large garlic cloves
  • 4 medium sweet onions
  • good quality olive oil
  • 8 pounds bison
  • 6 cans 15.5-ounce black beans
  • 3 cans 14.5-ounce chili seasoned fire roasted tomatoes
  • 1 jar 32-ounce Mateo’s Gourmet Salsa
  • 2 cans 29-ounce Goya Spanish Style Tomato Sauce
  • 3 tablespoons chili powder
  • 1 teaspoon jalapeño powder
  • 1 tablespoon cumin
  • 1 teaspoon garlic powder
  • 1 tablespoon cinnamon
  • 1 ounce unsweetened chocolate
  • 1 jar 6-ounce Goya Sofrito
  • 1 jar 32-ounce roasted peppers
  • 4 cans 15.5-ounce hominy
  • 1 cup tequila

In a food processor, pulse chop the garlic until finely minced. Peel & chop the onions into a small dice. Pour a small amount of olive oil into a 13-quart or larger dutch oven. Add the onions & garlic, sautéing over medium heat, until softened.


Add the bison to the onions & garlic, sautéing until the beef is well browned.


Reduce the heat to medium-low. Pour the black beans into a colander & rinse the beans under cold water. Shake well, then add to the bison, combining the beans & bison well.


Add the fire-roasted tomatoes, again mixing the ingredients together well.


Add the salsa & tomato sauce…mix together well.


Add the chili powder, jalapeño powder, cumin, garlic powder, cinnamon, chocolate, & Sofrito. Stir well. Do not taste just yet…add everything else & allow the chili to simmer for a while before you adjust seasonings.


Coarsely chop the roasted peppers. Drain the hominy. Add the peppers, hominy & tequila to the chili. Stir well to combine.


Reduce the heat to low & cover the chili, allowing it to simmer & thicken for about 60 minutes…after which, you can taste the chili & adjust any of the seasoning…I did not. Instead, I serve hot sauce for those who need more “kick”!


Keep simmering for another hour or so…or make-ahead & serve the next day!


Serve the bison black bean chili with your favorite chili toppings…I like avocado, shredded Mexican cheese blend, lite sour cream, pickled jalapeños & chopped cilantro.

Cooks' note:
If you make the bison chili a day or so ahead of time, I think it is easiest to reheat the chili in a 300˚ oven, which is easier because you do not need to worry about putting the heat on too high & the chili sticking to the bottom of the pot…or stirring…or anything…the chili can be reheated for 3-4 hours, and will be great!
If you do not need this much chili for your crowd, simply cut the recipe in half…you will easily serve 12 or so people…with leftovers, most likely!
I bought the garlic, bison, salsa, peppers, cheese, sour cream & avocados at Costco…if you do not have a Costco nearby, you can find bison at The Fresh Market…Mateo’s Gourmet Salsa may be bought online & at a variety of grocery stores…click here for the list…for the peppers, I just estimate…typically, peppers come in 14 or 16-ounce jars or cans…I typically will go over a smidge rather than use less of an ingredient…you can do the same with the tomato sauce, if you cannot find those sizes or brand…then substitute plain canned tomato sauce…most latin grocery stores will carry Goya brand…you can also shop online in their e-store…
There are multiple online sources for jalapeño powder…I bought Truly Texas Hoot ‘n Holler Jalapeño Powder in the San Antonio Airport a couple of years ago, & I love this stuff! But, if you would rather add the real deal, then I would add 1-2 large jalapeños (depending on your level of heat preference) & process with the garlic…remember, eliminating seeds from the jalapeño will reduce the heat…

A delicious & "skinny" version of chicken chili using black-eyed peas & great northern beans, boneless skinless chicken breasts, tomatillos & WIlliams-Sonoma Chili Verde Starter...it is so easy to make & can be made ahead...& it makes great leftovers! Because these crispy bean cakes are broiled rather than fried, the recipe doesn’t call for much oil, so the cakes contain less fat; they are also easier to prepare than fried versions.
