A complete chocolate cake.

This flourless chocolate cake is gluten free by default and is sweetened only with honey. The rich chocolate is perfectly balanced by the fluffy whipped cream and fresh berries.

Baking the desserts in a hot-water bath keeps them creamy and custardy beneath their golden, cakey tops. Lining the roasting pan with a dish towel helps the water circulate under the cups for even cooking.

These individual cakes are cosy and warming with a lightly spiced, moist interior. You could use pumpkin instead of the sweet potato and any dried fruit instead of the figs, but I think this duo is a winner!
